Chocolate Almond Cookies

Chocolate Almond Cookies are deliciously simple to make yet are an elegant and tasty dessert! It is perfect for gift or a small treat for yourself. Plus, almond is considered one of the healthiest food in this world. Although it is high fat food, it is monounsaturated fats. This fat and the antioxidants allow to reduce risk of heart disease. Also, students, adults, and elderly are encouraged to eat almond because it supports the brain function. It contains riboflavin and L- carnitine, two keys nutrients capable of affecting neurological activity and preventing cognitive decline. For people who wants to maintain their skin health, the vitamin E in the almond can nourish the skin and reduce signs of aging. Are you surprised with all the ability an almond has? Let's bake a treat that is both healthy and tasty!

Ingredients

  • Butter 130g (at room temperature)

  • Granulated Sugar 70g

  • Egg 22g

  • Cake Flour 206g

  • Cocoa Powder 22g

  • Almond Flakes 50g

Instructions

1. Bake the almond flakes in an oven at 180 degree celsius until you can smell the aroma and they are in golden colour.

2. Beat the butter and sugar together until the colour of the mixture becomes light yellow.

3. Add in a half of the egg and mix well.

​*Please don’t add all the egg at once and always make sure the egg and the butter is well combined before adding the other half.

4. Add in flour and cocoa powder and stir gently

5. Add the almond flakes and mix.

*Please do not over mix or crush the almond flakes.

6. Cut the dough into half, and place one of each in a plastic bag.

7.Make it into rectangular shape and place it in the freezer for harden.

8.Take out the harden dough, cut each in 0.8 cm thick and place them on the baking tray.​

9.Bake them for 20 minutes at 180 degree celsius.

You are done! Enjoy!

*Keep in mind that the baked cookies should be placed in a container right after cooling. The reason is that they will become really soft if they contact with the water in the air for a period of time! :)

*Since I reduced the amount of sugar by 30g, I HIGHLY recommended you to finish the food as soon as possible! The reason is that reducing the amount of sugar will decrease its shelf time. However, sharing is caring and that these cookies are so delectable that I believe it won't take you too much time to finish!
