Hello everyone! As a Taiwanese who loves to cook dinner for my family, I have been wondering whether I should make a Taiwanese Home Cooking series. Since I have had already shared a great deal of Japanese, Korea, and American recipes, I believe I should introduced some of my favourite Taiwanese recipes as well. Today, I will be sharing two of my healthy meals that are able to fight cancer and make your body stronger; their names are Chicken Shiitake Soup & Stir fried Cauliflower! Without further ado, let's get started!
#1 Chicken Shiitake Soup
Ingredients
1. Chicken (去骨/有骨都可)
2. Dried scallops
3. Ginseng
4. Brazil agaric
5. 老菜脯
6. Ginger
7. Carrot
8. Shiitake mushrooms
Methods
1. Put the chicken in a large pot and add 4 cups water. Bring to a boil over medium-high heat, reduce to a simmer and cook for 10 minutes This is important because we do not want any form or fat in our broth)

2. In another bowl, put 老菜脯, brazil agaric, and ginseng into it and bring to a boil over medium- high.

3. When the chicken from step 1 is cooked for 10 minutes, transfer all the chicken to the bowl from step 2


4. Put dried scallops, ginger, carrot, and shiitake mushrooms into the bowl and cover with a pot lid. Cook for another 30 to 60 minutes.

5. You are ready to serve!
#2 Stir fried Cauliflower
Ingredients
1. Shiitake mushrooms
2. Carrots
3. Cauliflower
4. Green Onion
5. Dried Shrimp
6. Water (a bowl)
7. Salt (a pinch)
8. Olive Oil (a tablespoon)

Methods
1. Add olive oil, carrot, dried shrimp, green onion, and shiitake mushrooms in a pot. Stir fry them until the smell of the dried shrimp comes ou

2. Add cauliflower and a bowl of water into the pot. Stir Fry and cover it with a pot lid.

3. When the colour of the cauliflower turns bright green, add a pinch of salt and stir fry them until the cauliflower becomes soft.

4. You are ready to serve!
