Taiwanese Home Cooking #3

Hello everyone! Welcome to my Taiwanese Home Cooking Series! Today, I will be showing you three super duper “healthy,” “simple,” “quick,” and “delicious” recipes that you can eat with rice! Because the steps are too easy and quick, I often cook these dishes for my family. Without further ado, let’s get started!

#1 Green Bean with Key Oyster Mushroom 四季豆炒杏鮑菇

Ingredients

1. Green bean

2. King oyster mushroom

3. Garlic

4. Salt

5. Black pepper

5. Olive oil

6. Chili (optional)

7. Water (optional)

Methods

1. With a tablespoon of olive oil, add in garlic and chili to the pot. Stir fry until the color of the garlic turns golden.

2. Add in king oyster mushroom and stir fry until the surface of the mushroom looks watery.

3. Add in green bean and stir fry. *add a little bit of water if needed.

4. Season with a little bit of salt and pepper. Stir and you are done!

#2 Pork and Fried Onion 洋蔥炒肉片

Ingredients

1. Olive oil

2. Onion

3. Dried Pork Slice (豬肉片)

4. Garlic

5. White pepper

6. Soy sauce

7. Mirin (can replace mirin to sugar)

Methods

1. With olive oil, add in dried pork slice into a pan. Cook until the color changes to slightly greyish red. (medium high heat)

2. Start to stir the pork to enhance the flavour. (i recommend you to stir for 1 - 1.5 minutes)

3. Add in sliced onion and garlic into the pan. Stir constantly until the onions become transparent.

4. Lastly, add in a white pepper, soy sauce, and mirin. (depends on how salty and sweet you want) You are done!

 

#3 Scrambled Eggs with Cucumber 黃瓜炒蛋

Ingredients

1. Eggs 2x

2. Cucumber 2x

3. Olive oil

4. Garlic

5. Fried garlic

6. White pepper

7. Salt

Methods

1. With a tablespoon of olive oil, add chopped cucumber and garlic into a pan. Fry for about 3 minutes. (medium high heat)

2. In a separate bowl, add in 2 eggs and whisk them.

3. Pour the egg liquid in and cover the pan with a lid.

4. After 30-45 seconds, carefully “stir it.” (Depending on the texture of your desire egg… if you want your eggs to be chunky (一塊一塊), don’t over-stir it. )

5. Add white pepper and salt. You are done!

 

I only took pictures of the end products for pork and fried onion and scrambled eggs with cucumber because I had to cook both dishes at the same time. Since they are all about frying and that their cooking time are both very short, I was unable to take pictures. So... I apologize for the inconvenience :( However, I still hope you try them out! :)
