My Way to Cook Curry Rice

There are a variety of ways to cook Curry Rice. In my opinion, thick-like rich sauce is my favourite type of curry sauce. Two key points to create this type of sauce are that you have to simmer down on low heat (uncover) until it thickens and you have to cook your onion and garlic patiently. Onions and garlics provide the deep base flavour of most curries, allowing the sauce to be rich and dark.

Additionally, do you know that Curry (without cream) is good for your health? There is a special ingredient called Curcumin (薑黃). It is found in curry powders and is able to protect you from Alzheimer's by up to 50%. Also, it has been found to help with digestion as well as guard against heart attacks and cancer of the colon.

In my recipe, I did not add any unhealthy ingredients, such as cream and butter. Instead, all the ingredients I put in are actually good for your health. Furthermore, this dish would taste just as good or even better the second day. Therefore, I recommend you to cook it before the day you are eating. Can't wait? Let's get started! FYI: You need two pots in order to cook this meal and that you can always adjust your ingredients)

Ingredients (Pot #1)

1. Rice

2. Potato (Did not use it in this recipe because I have leftover rice. But, I highly recommend you to)

3. Carrot

4. Onion

5. Green Onion

6. Curry Block

7. Pepper

8. Pork (any meat will be fine)

9. Curcumin Powder

10. Curry Powder

11. Tomato

12. Water

13. Olive Oil

14. Dried Shrimp

15. Mushroom

16. Curry Paste

17. Egg

Ingredients (Pot #2)

1. Green Bean

2. Cauliflower

3. Garlic

4. Olive Oil

Methods

1. Heat olive oil in a large pot over medium heat and cook the green onion, dried shrimp, and garlic.

2. Add in onions and cook them become translucent.

3. Add the carrot and tomato. Mix well.

4. Add the curcuma powder and curry powder.

5. Add water until all ingredients are covered. Cover the pot with a pot lid.

6. Bring the stock to boil and add mushroom and meat.

7. When the color of the meat changes, add the curry block and curry paste. Stir well.

8. Cover the pot with a pot lid, reduce to medium heat, and get ready to cook the vegetable.

9. In another pot, boil a pot of water.

10. Cook the green bean and cauliflower until the color changes.

11. Pour out the water in the pot and add a little of olive oil and garlic.

12. Cook for 5 minutes.

13. You are done! Enjoy!
